Information about our  This farm founded in 1976, was simply a dense <a href="http://islandmooncoffee.com/">jungle</a> at the time, with elementary access, a gravel road. Our founder spent the first few years, improving the access to the property, pouring endless yards of concrete to form 2 strips of roadway from the bottom of the mountain to the farm. The original indigenous vegetation was incredibly lush, dense and prolific. Many years were invested in selectively cultivating the original plants and trees and removing invasive species. The integrity of the natural diversity, being the dominant principle. For the next few years, fruit bearing trees were planted, the cultivars of oranges, lemons, macadamia nut, papaya, avocado and tea. As these trees matured, meticulous attention was paid to the rare tropical exotic fruit trees that were planted by the native Hawaiians centuries in the past. Coffee trees were introduced to the farm approximately 20 years ago (Coffea arabica) supplementing the other crops. As time went by the coffee trees flourished and thrived, propagating beneath the shaded permaculture of this perfect micro-climate. Additional bushes were planted throughout the farm in the understory of the existing forest. It was decided that the farm should implement a totally organic approach to managing the entire operation. Opting to maximize the gifts already inherent in nature, instead of the mechanized carbon producing methodology so prevalent in the world today. Animals were introduced to provide a sustainable fertilizer and the bonus of weed control Sheep provided the ideal solution. The farm is continually reinvigorated with the nutrients needed for the fruit and coffee trees while the invasive vegetation is kept at bay. Donkeys and geese were added in the years that progressed, until today the grounds are perfectly manicured, fertilized and picturesque. All processing of this USDA certified Kona coffee is by hand, the coffee cherries are picked at the apex of ripeness, assuring a finished product that is full bodied and full of luscious nuances and aromas. The beans are wet processed and sun dried.
